Do you sharpen at the Book Larder?
No that's Darin at Valley Sharp, I know him! He's cool.
You know that guy that used to sharpen here in Phinney Ridge?
Never met him but every other customer in that neighborhood mentions him. I looked him up, Bob Tate, currently in Bozeman Montana and still sharpening knives.
How often should I get my knives sharpened?
Not sure but the iPad app I'm working on to check customers in will have checkboxes for "ok to follow up with me in [ ] 6 months, [ ] one year" so maybe something in that timeframe.
What's the weirdest thing you've sharpened?
Being fairly new nothing crazy yet. Still looking for my first sword. Just received a scythe blade the other day, it's my first one of those. But mainly 99% of what I get is Henckels, Globals, Victorinoxes, Shuns and similar, with a few outdoorsy knives.
How should I carry my knives to you?
I'd say do what most people do and wrap in a kitchen towel. I'm sure that's what I did when I first saw the knife truck in Brooklyn back in 2011. Of course if you have a knife block that's even better.
Is it okay to sharpen Japanese knives on sanding belts?
Of course, you need to apex the edge one way or the other. On Japanese knives I'd use a lighter touch and more passes so as not to grind off more metal than necessary.
